Recipe: Blinces for Spring!


"Celebrate the seasons of fertility and birth with this recipe calling for cheeses and eggs"
Batter:

6 eggs
2 cups very cold water
Salt to taste
2 tbs sugar
flour

Beat all ingredients, except flour, with egg beater until fluffy. Add flour a table spoon at a time until the batter drips from the spoon in a continous flow (will be thin). Let sit in ‘frige 15-20 minutes.

Filling:

¾ lb Farmer Cheese
¼ lb cream cheese
1-2 eggs

Mix well until creamy (add 1 egg, then second egg if needed) Spray a frying pan with a non-stick spray. Add a sparse amount of oil (just enough to keep the batter from sticking, like pancakes). Use a small frying pan, just the size of a small dessert plate, and make one at a time! Spoon enough batter into the hot pan to just cover the bottom evenly, pour off excess if necessary.Let batter cook through without flipping. Turn onto a towel and let cool while you make the next one.
Fill with a small amount of filling (use above mixture or prepare a fruit filling of your choice . Pineapple or raspberries mixed with cream cheese works well.) Fold by turning one side over the filling, fold up the bottom, and roll the rest tight.
